Ingredients

  • 2 tsp salt to taste

  • 4 slices green chilli

  • 8 tbsp sunflower oil plus extra for greasing

  • 2 sprigs curry leaves optional

  • 3 tbsp chilli powder to taste

  • 1 tsp turmeric powder for colour

  • 1 whole chicken (washed and cut into small pieces)

  • 1 handful fresh coriander (chopped)

  • 3 tbsp ginger and garlic paste

  • 3 tbsp chicken masala

Method

<ol> <li>Add the ginger and garlic paste, salt, turmeric powder, chilli powder, coriander and some chicken masala to the chicken.</li> <li>Mix well and finally add 3 tbsp of oil and marinate it well.</li> <li>Set it aside for 30 minutes, or ten at the very least.</li> <li>Using a frying pan or a tawa, cover and cook the mixture on a medium flame for 10-15 minutes, checking occasionally.</li> <li>When you see the chicken is almost cooked, remove the lid and cook on a high flame to evaporate the chicken stock, stirring constantly. Remove from heat and set aside.</li> <li>Add the rest of the oil to another pan and heat it up with a high flame.</li> <li>Add slit green chillies and curry leaves and let them fry for 10 seconds.</li> <li>Now add the chicken slowly (watch the oil might spatter as there might be some chicken stock dripping into this hot oil).</li> <li>Lower the flame to medium and keep an eye on the chicken.</li> <li>Stir occasionally until the chicken is a darker golden brown and decorate it with fresh coriander (optional).</li> <li>Best served hot, with rice, roti or (even better) with a drink.</li> </ol>

Handy Hint

<p>If you want to make the chicken masala yourself, you will need 8 cloves; 1 large cinnamon stick; 4 cardamon; a few peppercorns and a half-cup coriander seeds (say a handful). Dry roast the ingredients for a few minutes until you get the aroma out of them, then grind the dried ingredients into a powder.</p> <p>Your neighbours won't be able to resist ;)</p>
