Slow cooker veggie shepherd's pie filling

  • 2 tbsp freshly chopped parsley

  • 1 Large onion chopped finely

  • 1 One glass red wine

  • 1 tsp teaspoon chopped rosemary

  • 2 tbsp Bisto

  • 1 tsp Marmite

  • Half pints Boiling water

  • 3 carrots sliced thinly

  • 2 leeks diced

  • 2 celery sticks diced

  • 1 bag quorn mince


<ol> <li>Stick it all in the slow cooker and cook on low all day, adding more boiling water if it looks as if it needs it.</li> <li>Add salt and pepper at the end.</li> <li>Then transfer to an oven proof dish and top with mash and grated cheese.</li> <li>Oven or grill until golden brown.</li> </ol>

Handy Hint

<p>I don't like Quorn mince but (trust me!) this is actually v nice. You can add other herbs, more wine, etc.</p>
