680g turkey, (leftover)
340g potatoes, some mashed and some roasted (leftover)
170g vegetables, (leftover eg brussels sprouts, carrots)
85g stuffing mix
- Dice the turkey and roast potatoes into small chunks and then mix with the mash and veg.
- Get your hands in and pat into 1/2 cm thick patties. Coat lightly with the stuffing mix. This gives it a bit of structure as well as adding a bit of crunch.
- Fry in sunflower or other similar oil until golden brown on both sides. Cool for 5 minutes and then serve on bread.
Have your oil ready to drop the patties in right away. We top with cranberry sauce but you can also use gravy
