Leftover turkey burgers

Ingredients

  • 680g turkey (leftover)

  • 340g potatoes some mashed and some roasted (leftover)

  • 170g vegetables (leftover eg brussels sprouts, carrots)

  • 85g stuffing mix

Method

  1. Dice the turkey and roast potatoes into small chunks and then mix with the mash and veg.
  2. Get your hands in and pat into 1/2 cm thick patties. Coat lightly with the stuffing mix. This gives it a bit of structure as well as adding a bit of crunch.
  3. Fry in sunflower or other similar oil until golden brown on both sides. Cool for 5 minutes and then serve on bread.

Handy Hint

Have your oil ready to drop the patties in right away. We top with cranberry sauce but you can also use gravy
