Spicy butternut squash soup

  • 1 large butternut squash peeled, seeded and diced

  • 3 tbsp butter

  • 1 onion finely chopped

  • 1 clove garlic finely chopped

  • 3 granny smith apples peeled, cored and cut into chunks

  • 750ml veg or chicken stock

  • 1/2 tsp medium curry pwder


<ol> <li>Melt butter in pan and fry onion until softened - add garlic</li> <li>Add squash, apples and stock</li> <li>Bring to boil then reduce heat, cover and cook for 15 mins</li> <li>Add curry powder and seasoning</li> <li>Allow to cool slightly then puree/liquidise</li> <li>Add crème fresh to serve</li> </ol>
