Ingredients

  • 1 large butternut squash, peeled, seeded and diced

  • 3 tbsp butter

  • 1 onion, finely chopped

  • 1 clove garlic, finely chopped

  • 3 granny smith apples, peeled, cored and cut into chunks

  • 750ml veg or chicken stock

  • 1/2 tsp medium curry pwder

Method

  1. Melt butter in pan and fry onion until softened - add garlic
  2. Add squash, apples and stock
  3. Bring to boil then reduce heat, cover and cook for 15 mins
  4. Add curry powder and seasoning
  5. Allow to cool slightly then puree/liquidise
  6. Add crème fresh to serve
