Slow cooker cabbage and tomato

Ingredients

  • 2 tins - chopped tomatoes

  • 1 smoked sausage ring

  • 0.5 tsp caraway seeds

  • 1 packet bacon lardons

  • pinch salt and pepper to season

  • 2 medium onions

  • 1 white cabbage

Method

  1. Chop the sausage into chunks and fry until browned, do the same with the bacon lardons an add to the slow cooker.
  2. Finely chop the onions and garlic and fry gently (with the caraway seeds if used) until softened then add to the slow cooker and mix well with the sausage and bacon.
  3. Finely shred the white cabbage and add to the pot with the salt and pepper (not too much salt)
  4. Add the canned tomatoes and mix all the ingredients together thoroughly.
  5. Put the slow cooker on high for 1 hour then reduce to Low for as long as you like or untill the cabbage has softened nicely.

Handy Hint

This recipe is very easy and actually improves with reheating. You can add more meats if you wish, belly pork works well. I sometimes add paprika to add some more flavour. Cook for as long as you like.
