Hidden veg bolognese sauce

  • 1 onion roughly chopped

  • 1 tins chopped tomato

  • 1/2 green pepper de-seeded and chopped

  • 1 tsp parsley fresh or chilled

  • 250g lean mince

  • 2 cloves garlic chopped

  • 1/2 carrot grated

  • 3 fresh basil


<ol> <li>Heat good slug of oil in pan</li> <li>Add onion and garlic.</li> <li>Fry until onion turns translucent.</li> <li>Add pepper and fry for another couple of minutes.</li> <li>Add carrot and mix in.</li> <li>Add tomatoes and parsley and bring back up to boil, simmer for about 10 minutes until the pepper, onion and carrots are tender.</li> <li>Meanwhile, in separate non stick pan, heat a small amount of oil and brown mince until cooked through.</li> <li>When the veg mix is cooked, add the basil and puree with hand held blender in the pan.</li> <li>Return to gentle heat, add the browned mince and mix.</li> <li>Serve with pasta or rice.</li> </ol>

Handy Hint

<p>If serving to older babies/ younger toddlers you can include the meat in the blending as well, if they're not yet up to chewing the mince</p> <ul> <li>Freeze in individual portions</li> </ul>

    I read somewhere that if you have a variety of colours in your veg, you have a variety of vitamins - so I put green, red and orange in this one. The carrot keeps it sweet, and pureeing the veg mix hides the true nutritious nature of the sauce!
