Hidden veg bolognese sauce

Ingredients

  • 1 onion, roughly chopped

  • 1 tins chopped tomato

  • 1/2 green pepper, de-seeded and chopped

  • 1 tsp parsley, fresh or chilled

  • 250g lean mince

  • 2 cloves garlic, chopped

  • 1/2 carrot, grated

  • 3 fresh basil

Method

  1. Heat good slug of oil in pan
  2. Add onion and garlic.
  3. Fry until onion turns translucent.
  4. Add pepper and fry for another couple of minutes.
  5. Add carrot and mix in.
  6. Add tomatoes and parsley and bring back up to boil, simmer for about 10 minutes until the pepper, onion and carrots are tender.
  7. Meanwhile, in separate non stick pan, heat a small amount of oil and brown mince until cooked through.
  8. When the veg mix is cooked, add the basil and puree with hand held blender in the pan.
  9. Return to gentle heat, add the browned mince and mix.
  10. Serve with pasta or rice.

Handy Hint

If serving to older babies/ younger toddlers you can include the meat in the blending as well, if they're not yet up to chewing the mince

    I read somewhere that if you have a variety of colours in your veg, you have a variety of vitamins - so I put green, red and orange in this one. The carrot keeps it sweet, and pureeing the veg mix hides the true nutritious nature of the sauce!
