Ingredients

  • 1 large egg

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • 2 tsp cinnamon, (or mixed spice)

  • 250g unsalted butter

  • 250g soft light brown sugar

  • 400g porridge oats

  • 2 handfuls sultanas

  • 150g plain flour

  • 1 jar mincemeat, (411g jar)

Method

  1. Heat oven to 180c/fan 160
  2. Cream butter & sugar together in large bowl.
  3. Beat in egg & vanilla
  4. Add oats, flour, baking powder & cinnamon/spices & mix until well combined.
  5. Stir in mincemeat & sultanas & mix well.
  6. Divide into blobs about the size of walnuts & space well apart on baking sheets lined with baking paper & press down lightly.
  7. Bake for 15-20 mins until golden at the edges.

These freeze really well.
