Easy sausage casserole

Ingredients

  • 2 tins chopped tomato

  • 1 clove garlic

  • 1 onion

  • 8 mushrooms

  • 0.5 red pepper

  • 0.5 yellow pepper

  • 12 sausages

Method

  1. Brown the sausages and put to one side
  2. Dice the onion, chop the peppers and slice the mushrooms
  3. Put all of the ingredients into 1 pot (slow cooker or casserole dish)
  4. Cook on medium heat at 180C for approx 45 mins (or leave in slow cooker as required)
  5. Serve with rice

Handy Hint

Substitute 1 tin chopped tomatoes with a sall jar of Lloyd Grossman's pasta sauce for a bit of extra flavour.
If not cooking for kids, add some chilli.
