Ingredients

  • 2 sweet potato large

  • 4 tbsp olive oil

Method

  1. Preheat your oven to 200C or 400F or Gas Mark 6.
  2. Cut the sweet potatoes in half and then cut lengthways into slices, then cut those lengthways so you create wedge/chip shapes - I aim for approx 1-2cm in diameter chunks.
  3. Get your hands mucky - Toss the wedges with the oil and then season well with salt and ground black pepper.
  4. Roast in the oven for 15-20 minutes, turning half way through. I leave mine a little longer as I like them dark in colour
  5. Serve in a warm bowl and enjoy!
