Ingredients

  • 1 onion

  • 1 butternut squash

  • 1/2 tsp hot chilli powder, To taste

  • 1 clove garlic

  • 2 vegetable stock cubes

  • 50g creamed coconut

Method

  1. Gently fry diced onion in oil for 5 minutes
  2. Add and fry diced squash and pressed garlic for a further 5 minutes
  3. Cover vegetables with boiled water and add stock cubes and chilli and stir.
  4. Simmer for 30 minutes
  5. Blend and add creamed coconut and stir until coconut is dissolved

Handy Hint

Serve with chunks of granary bread
