Thai Green Pork Curry

  • 0.5 tsp salt

  • 1 tbsp sugar

  • 1 tbsp vegetable oil

  • 400ml vegetable stock

  • 1 lime quartered

  • 400ml coconut milk

  • 1 tbsp lime juice

  • 400g pork fillet finely sliced

  • 500g aubergine

  • 1 tbsp fish sauce

  • 2 tbsp coriander leaves

  • 2 shallots sliced

  • 2 tbsp green curry paste

  • 2 lemongrass stalks (white part only)

  • 100g tinned bamboo shoots sliced


  1. Heat the oil and fry the curry paste over a gentle heat for a few minutes, stirring constantly.
  2. Add the coconut milk, stock, salt, sugar, shallots and lemongrass. Simmer for five minutes.
  3. Thickly slice the aubergine and cut each slice into quarters.
  4. Add to the curry with the bamboo shoots and simmer for 20 minutes.
  5. Add the pork and simmer for five minutes until cooked.
  6. Add the fish sauce and lime juice. Stir in the coriander.
  7. Serve with steamed rice and lime wedges.
