1 chicken breast
1 handful sesame seeds
1 handful plain flour
1 bread crust, whizzed into breadcrumbs
- Slice the breast into strips, beat egg and add salt/pepper to this mix.
- Make breadcrumbs up (approx 1 large slice of bread) and add a sprinkle of sesame seeds through.
- Dip chicken into flour first then egg then coat in breadcrumb mix
- Shallow fry in a mix of olive oil and veg oil until golden.
The sesame seeds give a good flavour, but you can also use corn flakes crunched up or quick cook polenta as a coating. Also fun to get the wee one doing the coating (ok, bit messy but hey ho). I make these all the time and my 4 year old loves them. I serve with steamed carrots and rice.
