1 small carrot
1 courgette, chopped into 4 chunks
1/2 handfuls rice
1 tbsp barbecue sauce, (optional)
4 pieces of red or yellow pepper
1 handful broccoli
- Thread the meatballs, courgette and pepper alternately on a skewer, starting and ending with pepper. If using barbeque sauce then now's the time to marinade the kebab.
- Place the kebab under a grill for about 15-20 minutes, turning it occasionally.
- Steam or boil the carrot for about 10 minutes.
- Cook the rice as per the packet instructions.
Children might find it fun to see the kebab before you take it off the skewer. You could then arrange it like a face on the plate:
Eyes & Nose: meatballs
Mouth: red pepper
Eyebrows: yellow pepper
Ears and eyes: courgettes
Necklace or tie: carrots
My 11 month old enjoyed this meal pureed up, we got 3 portions by adding some extra vegetables, and my 3 year old ate it served straight from the skewer.
