  • 125g butter

  • 90g caster sugar

  • 2-3 drops vanilla essence

  • 1 pinch salt

  • 5ml ground mixed spice

  • 250g plain flour

  • 1 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 60g walnuts finely chopped

  • 1 egg


<ol> <li>Stir together flour, baking powder, salt, bicarb and mixed spice.</li> <li>Cream butter and slowly add brown and white sugar, beating well.</li> <li>Beat egg with vanilla and add to butter mixture, then mix in the flour mixture - an electric beater is perfect for the job. Lastly, add the walnuts.</li> <li>Form into 2 long sausages, wrap in greaseproof paper and chill until firm enough to slice.</li> <li>Cut into thin rounds and bake on an un-greased baking sheet at 180C/350F/Gas Mark 4, for about 15 minutes.</li> <li>Cool on a cake rack. Makes about 54.</li> </ol>
