Bamiya (Armenian okra and apricots)

Ingredients

  • 60ml tomato puree

  • 1 tsp olive oil

  • 1 pinch salt (to taste)

  • 1/2 lemon juiced

  • 15-20 dried apricots

  • 2 medium onions sliced

  • 3 handfuls baby okra

  • 360ml vegetable broth

Method

  1. Sauté onions in very small amount of olive oil until they turn translucent.
  2. Add broth, tomato paste, salt. Bring to boil. Add lemon juice and okra.
  3. Arrange apricots on top of all this. Simmer for one hour.

Handy Hint

eople who don't like okra because of sliminess: it seems the longer you cook it, the less slimy it is. I have okra-phobic friends who really like it. This is a nice side dish or can just be served with rice/salad as a main meal.
