Ingredients

  • 1 pinch salt and pepper, (to taste)

  • 1 tbsp mayonnaise

  • 1 tin tuna, drained and flaked

  • 1 handful garden peas, cooked

  • 1/2 cucumber, cubed

  • 2 handfuls dried long grain rice, cooked or 1 bowl rice leftovers

Method

  1. Let rice and peas cool then mix everything together in a large bowl.
  2. Serve as part of a buffet meal with salads and cold meats, as a side to a main meal, or just let the kids grab a bowlful when they get hungry.

Handy Hint

This is an easy way to use up rice over from a curry or chilli, with things you probably have in the house.
