Ingredients

  • 1 yellow pepper deseeded and cut into chunks

  • 2 tbsp olive oil

  • 1 red onion thickly sliced

  • 1 red pepper deseeded and cut into chunks

  • 1 tbsp sweet chilli sauce

  • 1 pinch seasoning

  • 2 cloves garlic crushed

  • 4 potatoes medium, cut into small thin wedges

  • 250g beef mince lean

  • 1 jar salsa sauce shop bought

Method

  1. Preheat the oven to 200C/Gas Mark 6.
  2. Add chilli sauce and seasoning to mince and shape into 10-12 balls.
  3. Place the onions, peppers and potatoes on 1 or 2 baking trays and combine ingredients together.
  4. Coat in oil.
  5. Spread ingredients out into a single layer on a baking tray/s.
  6. Add the meatballs.
  7. Place in a preheated oven for 20-25 minutes until tender and golden.
  8. Serve as a pile, with a dollop of tomato salsa and salad leaves.
