  • 1 onion, diced

  • 1 tbsp unsalted butter, or oil

  • 125g pumpkin, or butternut squash, diced

  • 2 tomatoes, de-skinned, de-seeded and diced

  • 0.5 cloves garlic, crushed

  • 0.5 aubergine, skinned and diced

  • 1 handful prawns, diced

  • 120-240ml chicken broth, or water


  1. Put oil in deep pan and saute the garlic, onion, and tomatoes.
  2. Add the pumpkin or butternut squash.
  3. Add water or broth and simmer until nearly tender.
  4. Add aubergine and shrimp, cover and simmer again.
  5. Serve with rice or add in pasta noodles. Mash if preferred or cut the veggies in portions that your toddler can eat without the need to mash it.

Handy Hint

You can replace shrimp with lean minced beef or lamb or fish if preferred. If replacing shrimp with beef or lamb, put the meat in after the tomatoes, let them turn brown before proceeding to adding the squash or pumpkin.
