Ingredients

  • 1 pinch salt and pepper

  • 1 tbsp olive oil, (to taste)

  • 1 tbsp balsamic vinegar, (to taste)

  • 1 red onion, finely chopped

  • 1 tin mixed beans

  • 1 tsp lemon juice, (to taste)

Method

  1. Drain and rinse the beans.
  2. Mix all ingredients together (not sure about quantities you'll just have to experiment to taste!).
  3. Refrigerate overnight.
  4. Mix and drain some liquid just before serving.

Definitely make this a day in advance!
