  • 1 medium potato, peeled and chopped into small pieces

  • 1 medium onion, peeled and chopped into small pieces

  • 1 pinch salt and pepper, (to taste)

  • 2 pints vegetable stock

  • 1 tsp thyme, or sage

  • 450g carrot, peeled and chopped into small pieces

  • 25g butter, or margarine

  • 1 tbsp cream, or fromage frais

  • 1 tsp yeast


  1. Put all the vegetables into a large pan with the stock, seasoning and yeast extract.
  2. Bring to the boil, reduce the temperature and simmer for 30 minutes.
  3. Liquidise to a smooth consistency. Cream or fromage frais may be stirred in if required.
