Baked salmon with anchovies

  • 1 tsp olive oil

  • 1 lemon

  • 6 salmon fillets

  • 1 tin anchovies

  • 2 handfuls cherry tomatoes

  • 1 handful olives

  • 1 handful basil

  • 2 handfuls Greek yoghurt


<ol> <li>Cook the green beans and mix them with the tomatoes, olives, basil and olive oil. Add seasoning.</li> <li>Preheat oven to 230C.</li> <li>Squeeze lemon juice over the salmon, add seasoning and drizzle with olive oil, add bean/tomato/olive mixture to roasting dish and lay anchovies over the top of it.</li> <li>Roast for about 15 minutes.</li> </ol>
