Baked salmon with anchovies

Ingredients

  • 1 tsp olive oil

  • 1 lemon

  • 6 salmon fillets

  • 1 tin anchovies

  • 2 handfuls cherry tomatoes

  • 1 handful olives

  • 1 handful basil

  • 2 handfuls Greek yoghurt

Method

  1. Cook the green beans and mix them with the tomatoes, olives, basil and olive oil. Add seasoning.
  2. Preheat oven to 230C.
  3. Squeeze lemon juice over the salmon, add seasoning and drizzle with olive oil, add bean/tomato/olive mixture to roasting dish and lay anchovies over the top of it.
  4. Roast for about 15 minutes.
