Ingredients

  • 1 tsp wholegrain mustard

  • 2 tsp curry paste

  • 1 tbsp sour cream

  • 1 clove garlic finely chopped

  • 5 spring onions finely chopped (or 1 medium onion)

  • 1 handful mango pulp

  • 2 chicken breasts

Method

  1. Cut chicken into bite-size pieces and fry until cooked.
  2. Add finely chopped onion and garlic, cook for a further 2 mins.
  3. Add 1 mug of mango pulp, 1 teaspoon of wholegrain mustard and 2 teaspoons of curry paste. Cook for 3-4 minutes on medium heat.
  4. Take off the heat and stir in 1 tablespoon of sour cream.
