1 handful cheddar, grated
1 red onion, chopped
1 courgette, chopped
1 bag fresh spinach
1 packet of fresh lasagne sheets
1 ball mozzarella, chopped
1 jar arrabiata sauce
2 peppers, chopped
- Place the peppers, onion and courgette in a casserole dish with some olive oil drizzled on top, making sure all is covered and then pop in the oven for 5 minutes.
- Remove the dish from the oven and cover the veg with pasta sheets and layer mozzarella and cheddar with spinach, then more lasagne sheets and so on (as many as you like), ending with pasta on top.
- Drench in arrabiata sauce and sprinkle some grated cheddar on top.
- Bake until golden.
Good for feeding unexpected guests!
