Ingredients

  • 1 onion

  • 1 yellow pepper

  • 2 chicken breast

  • 1 tin chopped tomato

  • 1 handful parsley, chopped

  • 1 red pepper

  • 1/4-1/2 tsp paprika

  • 1 chicken stock cube

  • 8 cherry tomatoes

  • 1 tsp garlic

  • 1/2 chorizo

  • 1 tin chickpeas

  • 2 carrot

  • 10-15 French beans

Method

  1. Fry the onion and garlic, add chopped chicken breasts and chorizo, fry very briefly.
  2. Transfer to casserole dish, add all chopped veg and stock cube made in one mug of water. Add tinned tomatoes and extra water if needed to make sure all contents just covered. Paprika should be added to taste, I tend to use 1/4 tsp.
  3. Cover and put in the oven at around 190C/Gas Mark 6 for about 1.5 hours.
  4. Serve with rice and crusty bread.

Handy Hint

Squash the stock cube in its foil to avoid messy finger.
