Ingredients

  • 2 tbsp tomato puree

  • 3 tbsp olive oil

  • 1 tbsp sugar

  • 300ml vegetable stock

  • 6 chicken breast

  • 1 tsp cayenne pepper, (to taste)

  • 2 red pepper, chopped into large chunks

  • 1 tbsp paprika

  • 1 pinch seasoning, (to taste)

  • 2 tins tomatoes, put through a blender

  • 4 potatoes, chopped into large chunks

  • 3 onions, chopped

  • 3 carrot, chopped into chunks

  • 1 tbsp plain flour

  • 150ml Greek yoghurt

Method

  1. Preheat oven to 180C/Gas Mark 4.
  2. Brown the chicken and remove from heat.
  3. Gently fry onions until soft. Stir in flour and paprika and cayenne.
  4. Cook for about a minute and add the tomatoes, puree,sugar, stock and the vegetables. Bring to boil and then pour over chicken in a casserole dish.
  5. Put in oven and cook for about 90 minutes .
  6. Stir in yoghurt. Serve with brown rice.

Handy Hint

You can leave out chicken and add lentils to make it veggie. Also add more veg if wanted.
