  • 2 tbsp tomato puree

  • 3 tbsp olive oil

  • 1 tbsp sugar

  • 300ml vegetable stock

  • 6 chicken breast

  • 1 tsp cayenne pepper (to taste)

  • 2 red pepper chopped into large chunks

  • 1 tbsp paprika

  • 1 pinch seasoning (to taste)

  • 2 tins tomatoes put through a blender

  • 4 potatoes chopped into large chunks

  • 3 onions chopped

  • 3 carrot chopped into chunks

  • 1 tbsp plain flour

  • 150ml Greek yoghurt


<ol> <li>Preheat oven to 180C/Gas Mark 4.</li> <li>Brown the chicken and remove from heat.</li> <li>Gently fry onions until soft. Stir in flour and paprika and cayenne.</li> <li>Cook for about a minute and add the tomatoes, puree,sugar, stock and the vegetables. Bring to boil and then pour over chicken in a casserole dish.</li> <li>Put in oven and cook for about 90 minutes .</li> <li>Stir in yoghurt. Serve with brown rice.</li> </ol>

Handy Hint

<p>You can leave out chicken and add lentils to make it veggie. Also add more veg if wanted.</p>
