Breadcrumb parsley omelette

Ingredients

  • 1 handful parsley, chopped

  • 3 eggs

  • 1 tbsp butter, (for frying)

  • 1 handful fresh white breadcrumbs

Method

  1. Melt butter in an omelette pan.
  2. Meanwhile, beat the eggs in a small bowl until mixed, then pour into the pan.
  3. When the omelette is partially set, scatter over the breadcrumbs, parsley and season well with salt and pepper.
  4. Fold the omelette over and cook a minute or two more, until ready to to serve.
