1 handfuls parsley, chopped
1 tbsp butter, (for frying)
1 handfuls fresh white breadcrumbs
- Melt butter in an omelette pan.
- Meanwhile, beat the eggs in a small bowl until mixed, then pour into the pan.
- When the omelette is partially set, scatter over the breadcrumbs, parsley and season well with salt and pepper.
- Fold the omelette over and cook a minute or two more, until ready to to serve.
