340 g potato
1 large red onion, peeled and chopped
1 jars rogan josh paste
680 g beef skirt or brisket
- Cut meat into small cubes. Chop onion and potatoes.
- Brown meat in small amount of olive oil, then add onion and potatoes and cook for 5 minutes.
- Transfer to slow cooker, add the jar of curry paste and slow cook for 6-8 hours on low, or overnight.
- Serve with naan bread and raita made with plain yoghurt, chopped cucumber and mint.
Can be frozen when cooled - make when ingredients are on offer for a reasonable priced family dinner.
