1 chicken breast, cooked; pulled apart into small pieces
1 tbsp butter
3 handfuls penne pasta
100 g feta, crumbled
- Cook the pasta and quickly drain, returning to the still hot saucepan.
- Place on a hot hob and add the butter. Stir until the butter has melted, then add the feta and chicken breast.
- Stir the ingredients briskly for about 20 seconds, put the lid on and remove the saucepan from the heat. Wait a minute or so for the feta to partly melt, give another quick stir then serve immediately.
Don't drain the pasta too well, you can leave a little water behind. It helps the feta melt and stops the pasta drying.
