Ingredients

  • 1 splash oil

  • 1 stock cube

  • 1 large onion

  • 3 slices bacon, diced or 1 packet of bacon lardons

  • 1/2 bottles wine

  • 1 tin tomatoes

  • 2 cloves garlic

  • 4 lamb shanks

  • 3 carrot, chopped

  • 2 handfuls baby new potatoes

  • 1 handful parsley, chopped

Method

  1. Warm the oil and brown the lamb shanks, then put them to one side.
  2. Heat the onions, garlic, and bacon lardons, and then add the cooked lamb.
  3. Add the tin of tomatoes, carrots, potatoes and a stock and cook for at least 3 hours on the lowest heat setting.
  4. Add as much wine as you want about half an hour before serving, and chuck the parsley in at the last minute.

Handy Hint

Use the empty tomato can to make up your stock. It's the right amount, gets the last of the tomato sauce out and saves on the washing up!
