Spinach and cottage cheese quiche

  • 1 handful cheddar to sprinkle on top

  • 1 pinch salt

  • 200g flour

  • 1 pinch pepper

  • 100g vegetable fat

  • 1 eggs

  • 4 tbsp sour cream

  • 1 pinch fresh nutmeg

  • 200g cottage cheese

  • 3 tbsp water

  • 1 bag frozen spinach


<ol> <li>Preheat the oven to 180C.</li> <li>Rub the fat into the flour and salt (I do this in a food processor).</li> <li>Add the water and combine until it forms a ball (also in the food processor).</li> <li>Roll it out and put it in a quiche dish (quite a big one).</li> <li>Bake it blind for 10 mins.</li> <li>In the mean time, cook the spinach for about 7 mins in a 850 watt microwave.</li> <li>Stir the cottage cheese, soured cream and egg together and season with nutmeg and pepper.</li> <li>When pastry is ready, arrange the well drained spinach over the base, then pour the cheesey/eggy mixture over it. Smoosh it around so it looks even.</li> <li>Grate cheddar cheese over the top.</li> <li>Bake for approx 25 mins.</li> </ol>
