  • 1 large onion

  • 4 parsnips

  • 1 handful coriander

  • 3 medium potatoes

  • 5 carrot

  • 100ml cream

  • 1 splash balsamic glaze


<ol> <li>Boil the parsnips, carrots, onion and potatoes with 1 vegetable stock and 3 peppercorns for 20 minutes.</li> <li>Blitz with a handblender or liquidizer</li> <li>Add cream.</li> <li>Garnish with coriander.</li> <li>Drizzle with balsamic glaze.</li> </ol>

Handy Hint

<p>For a more substatial meal, add some rice, flat or egg noodles.</p>
