Parsnip and carrot soup with balsamic glaze

Ingredients

  • 1 large onion

  • 4 parsnips

  • 1 handful coriander

  • 3 medium potatoes

  • 5 carrot

  • 100ml cream

  • 1 splash balsamic glaze

Method

  1. Boil the parsnips, carrots, onion and potatoes with 1 vegetable stock and 3 peppercorns for 20 minutes.
  2. Blitz with a handblender or liquidizer
  3. Add cream.
  4. Garnish with coriander.
  5. Drizzle with balsamic glaze.

Handy Hint

For a more substatial meal, add some rice, flat or egg noodles.
