Ingredients

  • 1 onion chopped

  • 500ml vegetable stock or chicken

  • 1 pumpkin

  • 1 tsp cumin seeds

  • 2 cloves garlic sliced

Method

  1. Cut pumpkin into slices, remove seeds and roast with a little oil for about 30 minutes.
  2. Fry off chopped onion and garlic, add roasted pumpkin, black pepper and cumin seeds to taste.
  3. Add chicken stock and simmer for 20 minutes, blitz until smooth.
