  • 200g self-raising flour

  • 120ml milk

  • 1 pinch salt

  • 85g soft brown sugar

  • 1/4 tsp nutmeg

  • 1 eggs

  • 2 ripe bananas

  • 85g butter


  1. Pre-heat oven to 190C/Gas Mark 5.
  2. Lightly butter or oil 12 muffin tins or line with 12 paper cases.
  3. Mix sugar and butter in a bowl.
  4. Mix in mashed bananas.
  5. Beat in the egg and milk.
  6. Fold in flour and nutmeg.
  7. Spoon in to the tin and bake for about 20mins or until golden brown and firm to the touch.
