  • 1 yellow pepper roughly chopped

  • 2 red onion

  • 1 red pepper roughly chopped

  • 2 handfuls sweetcorn

  • 2 tins tomatoes

  • 400g pork belly slices chopped into bite-sized chunks

  • 2 tbsp BBQ sauce


  1. Throw everything into the slow cooker. If you are using high quality tins of tomatoes you might want to add a bit of water, if cheaper tins you will be ok.
  2. Cook on a low heat all day.
  3. If you want you can thicken it with corn flour just before serving.Great served with rice and a green salad.

    Tried this out - everyone liked it but it made more of a tomato sauce than BBQ! I'm still getting to grips with my slow cooker though so will give it another go with maybe more BBQ and less tomato.
