60 ml olive oil
1 pinches salt, to taste
1 lime, juiced and zested
1/2 chilli, very finely chopped
2 tbsp almonds, ground
4 cloves garlic, finely chopped
1 bunches coriander
- Put all the ingredients in a food processor and blend.
- Place the pesto in an ice cube tray and freeze.
This pesto makes lots of things 'zing', especially vegetable soup.
