Ingredients

  • 3 slices cheddar

  • 1-2 pepper, chopped

  • 2 tins tuna, drained

  • 1 tsp cumin seeds

  • 3 tomatoes, thinly sliced

  • 1 tin tomatoes

  • 3 cloves garlic, crushed

  • 1 pinch oregano

  • 1-2 onions, thinly sliced

  • 1 handful mushrooms, chopped

  • 1 pinch basil

  • 400g pasta

Method

  1. Cool the pasta in one pot as per instructions on packet. Drain once cooked.
  2. Meanwhile, fry the mushrooms in a little oil - until fairly dark in colour - with the garlic, cumin seeds, some basil and some oregano.
  3. Add peppers and cook further for 1 or 2 minutes.
  4. Add a tin of tomatoes, bring to boil and simmer.
  5. Add tuna once tomatoes have broken down.
  6. Mix the sauce into the pasta, transfer into oven dish and cover with a layer of sliced tomatoes and cheese slices.
  7. Cook in the oven at roughly 200C for around 10-15 minutes or until cheese has melted and is starting to turn golden.

    I used to feed this to my daughter when she was about 1 year old and she LOVED it! I also loved it! So it was great for lunch/dinner. Only thing I did wrong was make too much of it so I either couldn't eat it all or was eating it every day!
