  • 1 onion, finely chopped

  • 2 blocks spinach, frozen

  • 2 celery stick, finely chopped

  • 1 leek, finely chopped

  • 250g frozen peas

  • 3 potatoes, cubed

  • 3 carrot, chopped


  1. Gently fry the onion, leek and celery sticks together.
  2. Add the chopped carrots, the potatoes, frozen spinach and frozen peas. Cover with boiling water. Add a ham stock cube (or replace with vegetarian alternative) and simmer for 25 minutes. Blend the soup, add water to thin to desired consistency and serve with bread.

Handy Hint

I usually keep the soup fairly thick for a filling, vitamin-packed meal. My son does not like fruit and is not keen on vegetables. This soup always goes down very well with him and allows me to pump him full of vegetables he would not otherwise eat.
