Slow cooker Spanish potatoes

  • 1 yellow pepper diced

  • 2 tbsp olive oil

  • 284ml vegetable stock

  • 1 tsp smoked paprika

  • 1 red onion thinly sliced

  • 1 red pepper diced

  • 1-2 cloves garlic chopped

  • 400g tin chopped tomatoes

  • 56g olives

  • 550g baking potato cut into 1 inch chunks

  • 2 stems of thyme

  • 0.5 tsp dried red chillies crushed


<ol> <li>Heat oil in a frying pan and cook the onion until golden.</li> <li>Stir in the garlic, paprika, chillies and peppers and cook for two minutes. Add the tomatoes, stock, thyme, olives and salt and pepper. Bring to the boil.</li> <li>Add the potatoes to the slow cooker pot and pour over the hot tomato mixture. Cover with lid and cook on high for 4-5 hours.</li> <li>Serve with crusty bread and enjoy.</li> </ol>

Handy Hint

<p>Sweet potatoes can also be used for a change.</p>

    Sounds lovely, could I do it on low for say for 8 hours so I could bung it on before eork and would be ready when I got home ??

    Absolutely gorgeous. I didn't have olives but a large chunk of chorizo so chopped it up and added that instead. Gave a lovely smoky flavour to the dish.

    I made this without the chilli or olives, and I added four chopped rashers of smoked bacon, absolutely delicious!

    I made this recipe last night - delicious, easy, possibly a bit spicy for the kids but I'll tone down the spice and let them try it soon. Will become a standard dish here - thank you!

    i might add chicken breasts chopped up as my dh wont eat veggie either. or serve it as an side dish with other meaty things!

    It sounds delicious but my DH won't entertain the idea of having something vegetarian :( Do you think adding chorizo or something would work?

    I made this without the peppers (as they can go a bit bitter in the slow cooker) and with half the paprika and chilly and it was still *plenty* spicy and quite delicious.

    This is a super recipe for potatoes ..... why not dust off that slow cooker and give it a try!
