Ingredients

  • 1 onion cut into 1 inch squares

  • 4 tbsp oil

  • 1/2 tsp salt

  • 1/2 tsp sugar

  • 1/2 tsp black pepper

  • 1/2 tsp turmeric

  • 1 tin chopped tomato

  • 1/2 tsp ginger

  • 1 green pepper cut into 1 inch squares

  • 1kg chicken chopped into pieces

  • 1 tsp chilli

  • 1 tsp ground coriander

  • 1/2 tsp garlic

  • 1/2 tsp white pepper

Method

  1. Wash the chicken pieces and drain, leaving as little water on them as possible. Meanwhile, mix all the spices together in a small bowl. When the chicken has drained, stab the meat with a fork, covering all sides. Cover the chicken in the spices and mix well. Leave the chicken to marinate for at least half an hour.
  2. Heat the oil in a wok and add the chicken. Fry until cooked through and golden.
  3. Whilst the chicken is cooking, add the tinned tomatoes to a small saucepan with 1/3 of the tin of water as well. Bring the tomatoes to the boil and cook until smooth.
  4. Add the boiled tomatoes to the wok with the chicken and cook them together for a few minutes.
  5. Finally, add the onions and the peppers and cook for a further 2-3 minutes.
  6. Remove from the heat and serve with rice or noodles.

Handy Hint

Aim for the tomatoes sauce to be lump free - you can blend it. Add less or more chilli depending on how much spice you like.
