1 tsp bicarbonate of soda
55g caster sugar
1/2 tsp ground ginger
140ml full fat milk
2 tbsp treacle
1 eggs, beaten
225g plain flour
- Preheat the oven to 180C.
- Mix flour, ginger and bicarbonate of soda in a bowl.
- Melt fat, sugar and treacle in a saucepan, and add, with the egg, to the flour.
- Mix thoroughly and pour mixture into a 2lb loaf tin.
- Bake on the second shelf from bottom for 75 minutes.
“Lazy ginger” will work just as well.
