Ingredients

  • 1 stock cube

  • 1 orange, juiced

  • 1 red pepper, halved

  • 1 stick celery, chopped

  • 1 handful red lentils

  • 1 tbsp fresh coriander

  • 2 onions, chopped

  • 1 leek, chopped

  • 1 clove garlic, chopped (optional)

Method

  1. Fry the onions and garlic etc.
  2. Grill the pepper brushed with oil until black and sweat in a plastic bag until cool and remove skins (or use a jar).
  3. Place these in a pan with lentils, 225g stock and simmer for 20 minutes.
  4. Just prior to serving, add the orange and coriander to taste.

Handy Hint

Nice with crusty bread.
