  • 50g butter melted

  • 250ml double cream whipped

  • 1 tin condensed milk full fat

  • 250g ginger biscuits

  • 115ml lemon juice


  1. Crush biscuits and mix with enough melted butter to line a greased pie dish.
  2. Mix the lemon juice into the condensed milk.
  3. Fold cream into condensed milk mixture.
  4. Put in fridge for about 4 hours until set.

    I have made a similar dish using a teaspoon of cream of tartar to set it, instead of the double cream. Taking out the cream/whisking makes it even quicker to make. This is sooooo simple but delicious and very popular
