Ingredients

  • 1 large butternut squash

  • 1 goat's cheese

  • 1 pine nuts

  • 1 cherry tomatoes

  • 1 rocket salad

Method

  1. Put oven on around 220 (elec - don't know what the gas equivalent is, but fairly hot!)
  2. Slice the butternut squash down the middle from the top to the bottom so you have two halves. Scoop out all of the pips and stringy bits.
  3. Chop up the rocket, tomatoes and pine nuts and mix with the goats cheese. Fill the scooped out holes left in the butternut squash.
  4. Pop them both into the oven on a baking tray for around half an hour. The hard skin of the butternut acts as a 'bowl'.
    Check to see if flesh is soft enough for you after this time - this depends on your own preference. Return to over for another 15 mins if not soft enough for you.

Handy Hint

(Can be suitable for toddlers too if you scoop it all out and mash everything together then bake in the empty butternut skins) Enjoy!
