1 tbsp olive oil
1 tsp black pepper
1 chicken (large)
2 chicken stock cube
1 tsp garlic powder
1 tsp rock salt
- Wash the chicken, pat dry with kitchen paper.
- Put in a baking tray, pour a bit of olive oil over chicken then brush with pastry brush until evenly coated.
- Crumble chicken oxo cubes over the chicken then rub until evenly coated. Sprinkle on garlic granules or powder. Grind pepper and lastly salt to taste.
- Roast chicken in oven at 200C/Gas Mark 6 for 1 hour 30 mins to 2 hours.
If you want to use a poussin just use 1 stock cube. Or, for less flavour on a normal sized chicken just use 1 cube - although who wants less flavour!
