  • 1/2 tsp baking powder

  • 1 pinch salt

  • 80g sugar

  • 1 eggs

  • 1 jar jam (for filling)

  • 200g plain flour

  • 100g butter or margarine

  • 1 packet of vanilla sugar


<ol> <li>Bung everything into a food processor and whizz around. Or into a bowl and mix well.</li> <li>Roll out to about 1/2 cm thickness then use cutters to make cookies of around 1.5cm diameter. Cut peepholes in half of the biscuits.</li> <li>Bake in a hot oven (200C) for about 11 minutes.</li> <li>Leave to cool then put the biscuits together with jam in the middle.</li> </ol>

Handy Hint

<p>You can use the same recipe to make Christmas cookies or Easter biscuits using the appropriate cookie cutter.</p> <p>Or let the DC decorate them with icing.</p>

    You can substitute vanilla essence for the vanilla sugar. Sorry, did not realise that it is not readily available in UK.
