1/2 tsp baking powder
1 pinch salt
1 jar jam, (for filling)
200g plain flour
100g butter, or margarine
1 packet of vanilla sugar
- Bung everything into a food processor and whizz around. Or into a bowl and mix well.
- Roll out to about 1/2 cm thickness then use cutters to make cookies of around 1.5cm diameter. Cut peepholes in half of the biscuits.
- Bake in a hot oven (200C) for about 11 minutes.
- Leave to cool then put the biscuits together with jam in the middle.
You can use the same recipe to make Christmas cookies or Easter biscuits using the appropriate cookie cutter.
Or let the DC decorate them with icing.
