Ingredients

  • 1 onion, sliced. Could substitute with leeks or shallot

  • 100ml double cream, could substitute with coconut cream

  • 4 chicken breast, chopped into chunks

  • 1 tsp ginger

  • 1 tsp chilli

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 cinnamon stick

  • 4 tbsp groundnut oil

  • 6 cloves

  • 1 tsp cumin seeds

  • 8 cardamom pods, crushed

  • 2 cloves garlic, crushed

  • 1 tsp coriander, chopped

  • 400g tin chopped tomatoes

  • 1 tsp coriander seeds

  • 50g butter

Method

  1. Fry the onion in oil and butter until deep golden brown.
  2. Add the cardamom, cloves and cinnamon stick and stir for a moment, then add the ginger, garlic, chilli, and the other spices.
  3. Add the chicken, then the chopped tomatoes.
  4. Simmer for 10 minutes covered, then 10 minutes with the lid off.
  5. Add the coriander and cream and simmer for another 10 minutes.
  6. Serve with buttered spinach.

    I was very disappointed with this. Tasted a bit like a cheap microwave curry to me. Wasn't worth the effort IMO although I could have done something wrong@
