Ingredients

  • 2 tsp vanilla extract

  • 2 tbsp cocoa powder

  • 1 handful desiccated coconut

  • 2 handfuls porridge oats

  • 1 tbsp whiskey, (optional, not for kids version obviously)

  • 1 handful stoned dates, covered in boiling water

Method

  1. Cover the dates in boiling water and leave to stand. Mix together the other ingredients in a bowl. Blend the date mixture until smooth, then add to dry mix and stir well.
  2. The mix should be firm enough to handle, but still a bit sticky. If not add some more oats or some coconut, if too dry add a little water (or something stronger).
  3. Shape into small balls and roll in a plate covered with coconut or ground almonds.

Handy Hint

Store covered in fridge for up to 2 weeks, or freeze up to 3 months. This makes about 60.

    WARNING... HIGHLY ADDICTIVE AND ADAPTABLE You can make all sorts of versions of these, with rum soaked raisins for the adults, or a cherry in the middle for kids... you could swap the dates in for apricots or figs, leave out the chocolate and add peanut or other nut butter... No reason to ever get bored of these IMO.
