Ingredients

  • 1 tbsp olive oil

  • 1 tbsp crunchy peanut butter, heaped

  • 5 tbsp boiling water

  • 1 tsp soy sauce

  • 1 small lime, juiced

  • 3 tsp sweetener

  • 1 clove garlic, crushed

  • 4 tsp chilli flakes

  • 1 shallot, finely chopped

Method

  1. Heat the oil in a pan and add the onions.
  2. Cook until softened, then stir in the garlic.
  3. Add the rest of the ingredients and let it simmer for 3 minutes.

Handy Hint

Obviously you can adapt the spiciness or thickness of the sauce. Just bear in mind the calories and carbs will change.
