Marmalade bread and butter pudding with Cointreau cream

Ingredients

  • 1 1/2 pints milk

  • 500ml double cream (to serve)

  • 110g sugar

  • 8 slices bread

  • 3 eggs beaten

  • 1 jar marmalade

  • 1 tbsp Cointreau

Method

  1. Butter the bread and spread with marmalade.
  2. Layer in an oven proof buttered dish.
  3. Beat the eggs, milk and sugar together and pour over the bread.
  4. Cook at 180C for about 45 mins, until the top is golden brown.
  5. Serve with double cream spiked with Cointreau.
