Ingredients

  • 1 pinch salt and pepper (to taste)

  • 1 onion finely chopped (or 4 spring onions)

  • 2 tins tuna

  • 2 tbsp sweetcorn

  • 1 tbsp paprika

  • 1 eggs beaten

  • 2 tbsp low fat cream cheese

Method

  1. Preheat oven to 180C.
  2. Cover oven tray with greaseproof paper.
  3. Mix all the ingredients together.
  4. Using your hands make burger-size patties about 2cm thick. Should make about 8/10. Place on oven tray and put in oven for 30 minutes.
  5. Ready when slightly crusty on the top.
  6. Mine love these with spicy potato wedges and peas.

    This is a tried and tested recipe used with toddlers right up to teens. I have also added extra grated cheese and chilli flakes/powder if there are no littlies around. Fishcakes can be made in advance and stored in fridge.
